So the big issue for me is making myself eat breakfast. I’ve always been awful at it. But it’s true what they say… Breakfast IS the most important meal of the day.
If, like me, you find yourself lacking in time in the morning to make a decent, nutritious breakfast, why not give one ‘batch breakfast’ recipes a go.
(Trust me… it’s better than a Starbucks Coffee and Muffin. Not like that was my go-to before… at all… I promise…)
You can make many of them on a Sunday night to last the week or at least in a few days, allowing you to repeat the process again on Tuesday/Wednesday evening.
I’ve also thrown in the idea of ‘Overnight Oats’. Not really a batch recipe but definitely an easy meal option when prepared the night before.
Camille Styles’ Mini Dill Frittatas
These Mini Dill Frittatas are ridiculously easy to make and contain all the standard ‘fridge staples’ that you will already have.
Make them in a muffin tray and, once cool, pop them in the fridge.
3 of these on the way to the bus stop definitely helped to get my day started. Especially when matched with a travel mug of warm water and lemon juice. Delicious!
Though Camille doesn’t say to do so, I would suggest using muffin casings to save the cleanup… because damn, these things stick!

Livia’s Kitchen Blueberry Porridge Squares
Porridge Squares and Nutritiously packed Breakfast Bars are a complete lifesaver.
They last the week, taste great and fill you up till lunch (or at least till you get to your desk!)
Most of the ingredients in these bars can be bought in bulk and stored away (oats, nuts, seeds etc) and are super cheap, making recipes like this not only good for you… but also good for your wallet.

Deliciously Ella’s Overnight Oats
I’ve linked to Ella’s page but if you look online, you’ll find hundreds of Overnight Oat recipes.
These recipes are so easy with preparation taking such little time that you really have no excuse.
I make mine in a small mason jar so I can grab and go… and eat them on the bus to work. Just open the lid, toss in your topping of choice and away you go.
